The name of Chhattisgarh's traditional dish 'Dubki' is quite interesting. Its taste is also delicious. Although it is a dish similar to Kadhi its taste is different. In this, instead of gram flour pakodas, there are urad dal pakodas which are not fried. These are cooked in steam. Whoever tastes it once feels like tasting it again. We can say that we too can enjoy this dish of Chhattisgarh sitting at home. It is also very easy to make, so follow the recipe given by us.

Ingredients
Urad Dal – 1 cup (soaked for 2-3 hours)
Water – as required
Tomatoes chopped – 2 medium-sized
Curd - 1 cup
Chopped onion – 1 big
Chopped green chillies – 2-3
Green Coriander – 1 tbsp
Red chilli powder – 1 teaspoon
Oil – 2 tbsp
Garam Masala - 1/2 tsp
Salt - as per taste
Cumin powder – 1/2 teaspoon
Asafoetida – a pinch
Coriander powder – 1/2 teaspoon
Turmeric - 1/4 teaspoon

Recipe
- First of all, filter the soaked urad dal and grind it finely using a mixer or food processor.
- Add water as required to make a smooth paste.
- Put the lentil paste in a greased steaming dish or in boiling water and steam it until it sets for 15-20 minutes.
- Heat 2 tablespoons oil in a pan. Add a pinch of asafoetida and cumin powder to it. Let them crackle.
- Add onion, tomato, curd, green chili, and green coriander paste in it. Fry this spice well.
When it is roasted, add red chili powder, coriander powder, turmeric, and garam masala. Mix well and cook for a minute.
- To make gravy, add water as required and let it boil.

- Add salt as per taste and let the masala cook for 5-7 minutes.
- To serve, cut the boiled lentil paste into cubes and mix it with garam masala.
Garnish with chopped green coriander and serve hot with boiled rice or chapatti.
