Ingredients to make Mango Launji
Raw mango pieces - 1 cup
Fennel seeds - 1/2 tsp
Cumin - 1/2 tsp
Rai - 1/2 tsp
Red chili powder - 1/2 tsp
Carom seeds - 1/4 tsp
Jaggery - 1 cup
Chaat masala - 1/2 tsp
Garam masala - 1/2 tsp
Black salt - 1/2 tsp
Asafoetida - 1 pinch
Oil – 2 tbsp
Water - 1 cup
Plain salt - as per taste

How to make Mango Launji
To make delicious mango launji, first, take raw mango and wash it with clean water and wipe it with a cotton cloth. After this, peel the raw mango with a sieve and cut it into long strips, and separate the kernels. Now put 2 spoons of oil in a pan and heat it on medium flame. When the oil becomes hot, add cumin, mustard, fennel, asafoetida, and other spices and fry while stirring for a few seconds.

When the aroma starts coming from the spices, put the pieces of raw mango in the pan and with the help of a spoon mix it with the spices and cook. After some time, add red chili powder to the mixture and put 1 cup of water on low flame and let the launji cook. After adding salt as per taste to the launji, cover the pan and cook for 2-3 minutes.


After cooking the launji, add crushed jaggery to it and mix. After this, increase the flame of the gas and cook the launji until the jaggery melts well. If the cloves seem sour, you can add some more jaggery. After this add chaat masala and garam masala and mix it with launji. After cooking for some time, turn off the gas. Tasty and nutritious mango launji is ready. It can be served with lunch or dinner.
