Pindi Chole is a popular Punjabi dish made with chickpeas, spices, and a tangy blend of flavours.

Here is a recipe for Pindi Chole:

Ingredients:

  • 2 cups chickpeas (soaked overnight and cooked until tender)
  • 2 onions (finely chopped)
  • 2 tomatoes (finely chopped)
  • 2 green chillies (finely chopped)
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon amchur (dried mango) powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons oil
  • 2 tablespoons chopped fresh coriander leaves for garnish

Instructions:

  1. Heat the oil in a large pan or kadai and add the cumin seeds, coriander seeds, and fennel seeds. Fry for a few seconds until fragrant.
  2. Add the chopped onions and green chillies and sauté until the onions turn translucent.
  3. Add the ginger and garlic paste and cook for a minute.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.
  5. Add the red chilli powder, turmeric powder, amchur powder, and garam masala powder. Stir well and cook for a minute.
  6. Add the cooked chickpeas along with 1/4 cup of water and salt to taste. Mix well and cook for 5-7 minutes.
  7. Take off the heat and garnish with fresh coriander leaves.
  8. Serve hot with roti, naan, or rice.
