Pindi Chole is a popular Punjabi dish made with chickpeas, spices, and a tangy blend of flavours.
Here is a recipe for Pindi Chole:
Ingredients:
- 2 cups chickpeas (soaked overnight and cooked until tender)
- 2 onions (finely chopped)
- 2 tomatoes (finely chopped)
- 2 green chillies (finely chopped)
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon fennel seeds
- 1 teaspoon amchur (dried mango) powder
- 1 teaspoon garam masala
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- 2 tablespoons chopped fresh coriander leaves for garnish
Instructions:
- Heat the oil in a large pan or kadai and add the cumin seeds, coriander seeds, and fennel seeds. Fry for a few seconds until fragrant.
- Add the chopped onions and green chillies and sauté until the onions turn translucent.
- Add the ginger and garlic paste and cook for a minute.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the red chilli powder, turmeric powder, amchur powder, and garam masala powder. Stir well and cook for a minute.
- Add the cooked chickpeas along with 1/4 cup of water and salt to taste. Mix well and cook for 5-7 minutes.
- Take off the heat and garnish with fresh coriander leaves.
- Serve hot with roti, naan, or rice.
