Raw turmeric – 250 grams (1 cup grated)
Mustard oil – 100 grams (half cup)
Salt – 2 1/2 tsp
Red chili – half teaspoon
Fenugreek seeds - 2 teaspoons coarsely ground
Mustard powder – 2 tsp
Ginger powder - 1 tsp
Asafoetida – 2-3 pinch
Lemon – 250 grams (1/2 cup juice)
Peel the turmeric, wash it, and keep it in the sun for some time to dry the water, or remove the water by wiping it with a cotton cloth.
Now grate this peeled turmeric or chop it finely. Since turmeric pickle is eaten in very small quantities, grated turmeric pickle is more convenient instead of small pieces of pickle.
Put mustard oil in a pan, heat it well, cool it a little, add asafoetida, fenugreek, all the spices, and grated turmeric to the oil and mix well.
Take out the turmeric pickle in a bowl and add lemon juice to the pickle, mix well, and keep the turmeric pickle covered. After 4-5 hours, mix the pickle again by moving it up and down with a spoon.
Turmeric pickle is ready, store the turmeric pickle in a completely dry glass or ceramic container. If possible, keep the pickle container in the sun for 2 days. Keeping it in the sun increases the shelf life of the pickle. And pickles also become delicious. If turmeric pickle is kept immersed in oil then this pickle will remain good for more than 6 months.
