1. Paneer-Spinach Tikki
Material
Spinach - 3 cups
Boiled Mashed Potatoes – 4
Bread Crumbs – as required
Ginger-garlic paste- 1 tbsp
Paneer – 100 grams (chopped)
Red chilli, cumin powder- 1/2, 1/2 tsp
Chilli - 1 tbsp
Turmeric, dry mango powder- 1/4, 1/4 tsp
salt to taste
oil for frying
Method
First of all mix spinach and salt.
Now put it in a pan, cover it, and steam it for 8-10 minutes.
Cool it and grind it in a mixer.
Mix potatoes, spinach paste, all the spices, and salt in a bowl.
Mix cottage cheese and cottage cheese in a separate bowl.
Now spread the mixture slowly on your hands.
Fill the cheese stuffing in it and make tikkis.
Heat oil in a pan and fry the tikkis until they turn golden.
Remove the prepared tikkis from a serving plate and serve with green chutney and tomato chutney.
2. Churning Butter
Material
Rice flour – 5 cups
Butter – 1/4 cup
Urad dal - 5 tbsp
Cumin and sesame seeds – 1 tbsp each
Milk – as required
salt to taste
oil for frying
Method
First of all, fry the urad dal until it turns golden.
Then cool it and grind it.
Now mix all the ingredients except oil.
Add water to it and mix.
Now put flour in a smooth chakli mold and make chakli.
Heat oil in a pan and deep fry the hot gram until it becomes crispy.
Now your butter chuck is ready.
Serve it with tea.
3. Dahi-Papri Chaat
Ingredients (serving-3)
Papdi- 15
Boiled mashed potatoes – 2
Boiled gram – 3 tbsp
Onion, Tomato - 2 tbsp (finely chopped)
Coriander – 1 tsp (finely chopped)
Curd – 5 tbsp
Green and tamarind chutney – 3-4 tbsp
Cumin powder – 2 pinches
Salt, red chili powder- as per taste
Chaat masala – as per taste
Salted Bhujia – 2 tbsp
Method
Place 5-5 papdis on a plate.
Add potatoes, onions, and tomatoes and fry.
Add curd, green, and tamarind chutney on top.
Then sprinkle chaat masala, salt, red chili and cumin powder on top.
Your Dahi-Papri Chaat is ready.
Garnish it with namkeen and serve it.
