Ragi and Jaggery Peda

1 cup ragi flour
1/2 cup grated jaggery
1/4 cup low-fat milk
1/2 tsp cardamom powder
A pinch of salt

Method of making
First of all, heat a non-stick pan and fry the ragi flour until the aroma starts coming from it and its color changes slightly.
Now in another pan melt jaggery with low-fat milk along with cardamom powder and a pinch of salt.
When the jaggery melts and becomes thick, add roasted ragi flour to it.
Keep stirring continuously until the mixture becomes thick and starts leaving the sides of the pan.
Then remove it from the flame and let it cool down a bit.
When it cools down properly, shape this mixture into pedas.
Now finally, if you want, you can also decorate it with chopped nuts.

Oats and Dry Fruit Barfi

1 cup oats
1/2 cup finely chopped mixed dry fruits
1/2 cup low-fat milk
1/4 cup honey or maple syrup
1/2 tsp cardamom powder
A pinch of saffron (optional)

Method of making
First of all, dry roast the oats in a non-stick pan until they become light golden and aromatic.
Then heat low-fat milk in another pan and add honey or maple syrup, cardamom powder, and saffron and mix.
After this add roasted oats and mix until the mixture becomes thick and starts leaving the sides of the pan.
Now take it off the flame add finely chopped dry fruits and mix well.
Take out this mixture in a greased plate and press it evenly to make barfi.
Let it cool and set for some time. Then cut into square pieces.
