Ingredients needed to make vegetable
Brinjal - 1/2 kg
Coriander powder - 2 tsp
Fennel powder - 1/2 tsp
Red chili powder - 1/2 tsp
Dry mango powder – 1/2 tsp
Green coriander chopped - 3 tbsp
Grated ginger – 1 inch
Crushed Garlic - 5 cloves
Green chili paste - 1 tsp
Garam masala - 1/2 tsp
Chopped onion - 1
Cumin - 1/2 tsp
Turmeric - 1/2 tsp
Asafoetida - 1 pinch
Oil - 4 tbsp
salt - as per taste

Stuffed Brinjal Curry Recipe
To make this vegetable, first cut the brinjal and wash it thoroughly. Now without removing the stem, make 4 cuts in the brinjal from all sides. After this, take a pan and put 4 spoons of oil in it and heat it on medium flame. When the oil is hot, add coriander powder, red chili powder, fennel powder, turmeric, ground onion, and garlic paste and mix it well.

Now add green chili paste, mango powder, and salt as per taste to this mixture and fry it well. Now fill this prepared masala in the chopped brinjal with the help of a spoon etc. After this, again in a pan, add oil, and heat it. After the oil becomes hot, add cumin seeds to it. After this, one by one the brinjals filled with spices will be put in the oil. Now cover these brinjals and cook on a medium flame for about 10 minutes. However, keep an eye on the condition of the ripening of brinjal in between. When the brinjals are cooked from one side, flip them over to the other side.

When the brinjals are cooked well from both sides, then turn off the gas. Now garnish the stuffed brinjal with green coriander. Fully cooked brinjals can be served with roti, paratha, or puri for lunch or dinner.
