Ingredients for making Banarasi Kachori-Vegetable
Flour - 2 cups
Urad Dal – 1/2 cup
Fry paneer – 1/2 cup
Potatoes boiled – 2-3
Chana boiled – 1/2 cup
Tomato paste - 1
Onion chopped - 1
Garam masala - 1 tsp
Kasuri fenugreek - 1 tsp
Cumin - 1/
teaspoon
Red Chilli Powder – Teaspoon
oil - as needed
salt - as per taste

Banarasi Kachori-Vegetable Recipe
To make Banarasi Kachori, first soak urad dal for some time and then grind it. After this add ground pulses, and flour in a vessel and mix. Add one spoon of oil, salt as per taste, and all the spices to it and knead it well. Now keep the dough aside for 10 minutes. Meanwhile, put oil in a pan and heat it. Now put cumin seeds in the pan and apply to temper.

After some time add garam masala, red chili powder, coriander powder, chopped onion, and tomato puree to the pan and cook while stirring. When the puree cooks well and starts boiling, add boiled potatoes, and fried paneer and soaked in water overnight and then add boiled chickpeas, mix well with the help of a ladle and let it cook. Now add water according to the requirement in vegetable and add salt as per taste and cover and cook for 10 minutes.

Keep stirring the vegetable in between with the help of a ladle. After the vegetable is cooked, add kasoori fenugreek to it, mix and keep it covered. Now take the dough and knead it once more. After this, make small round balls of dough and roll them. Heat oil in a pan and deep fry the prepared kachoris in it. Take out the puffed golden kachoris in a plate and serve with vegetables.
