The name sambar comes first as soon as you take the name of South Indian food, so whenever you feel like eating traditional South Indian food, try sambar. It is very easy to make sambar made from toor dal, favorite vegetables, and spicy spices. It is served with hot steamed rice.

Ingredients
1 cup toor dal (boiled)
1 cup Madrasi Onion (chopped)
1/4-1/4 tsp turmeric powder
Rye, Fennel, and Cumin
1 tsp red chili powder
a pinch of asafoetida
2 eggplants
1-1 capsicum and potato
2 drumstick pods
3 whole red chilies, a few curry leaves
3 tsp oil
salt to taste
Few green coriander (chopped)

To grind:
3 tsp coconut (grated)
a pinch of fenugreek seeds
2 tsp chana dal and whole coriander
half tsp cumin
2 tsp oil- Mix all the ingredients and grind them.

Method
-Boil all the vegetables and drain the water.

-Heat oil in a pan and sprinkle mustard seeds, cumin seeds, asafoetida, fennel, whole red chilies, and curry leaves.

-Add turmeric powder, red chili powder, and ground masala powder and fry it.

-Add boiled dal, vegetables, salt, and Madrasi onions.

-If required, add water and cook till it comes to a boil.

-Serve garnished with green coriander.
