Ingredients for Mango Phirni
Rice - 1 cup
Mango Pulp - 2 cups
Milk - 4 cups
Saffron - 1 pinch
Sugar - 4 cups
Cardamom powder - 3/4 tsp
Almonds chopped - 1/4 cup
Pistachios chopped - 1/4 cup
Raisins - 1/4 cup
How to make Mango Phirni
- To make Mango Phirni full of flavor, first clean the rice and soak them in water for 2 to 3 hours. After this, cut small pieces of almonds, pistachios, raisins and keep them aside in a bowl. After the stipulated time, remove the rice from the water and grind it coarsely in the grinder with the help of a mixer. After this, put milk in a deep-bottomed vessel and keep it to heat on medium flame.
- When the milk becomes slightly hot, add coarsely ground rice and mix it well with a ladle. After this, add cardamom powder, sugar and a pinch of saffron, mix it properly and let the phirni cook on medium flame. Keep stirring this mixture till the rice gets cooked well in the milk. After this, add half of the dry fruits already cut in the milk and mix.
- Now cook the phirni for another 2-3 minutes and switch off the gas. After this, add mango pulp (mango pulp) in milk and mix it well with phirni with a ladle. After this, keep the mango phirni in the fridge to cool down. When the mango phirni cools down well, garnish it with the remaining almonds, pistachios and raisins.
