Ingredients needed to make Shahi Matar Makhana Curry
Green peas - 1 cup
Makhana – 1.5 cups
Cashew - ¼ cup
Ghee - 1 tsp
Oil - 4 tsp
Bay leaf - 2
Black pepper - 4
Cardamom - 4
Cloves - 4
Cinnamon - 2 pieces
Cumin – ½ tsp
Chopped Onion - 2
Green chilies – finely chopped (2 to 3)
Ginger - finely chopped
Garlic - (finely chopped)
Tomato – 2 (chopped)
salt - as per taste
Turmeric powder – ½ tsp
Cumin powder - 1/2 tsp
Coriander powder - 2 tsp
Kashmiri red chili powder - 2 tsp
Water - 1/2 cup
Kasuri Methi - 1 tbsp
Cream - 2 tbsp
Garam masala - 1/2 tsp
coriander - finely chopped
 
How to make Shahi Matar Makana
First of all, fry the makhana in ghee on low flame. Due to this, the makhana will not become too wet in the curry. (Note- Don't put Makhans directly in the curry). Once the Makhanas are roasted, take them out on a plate and keep them cool down.

Now put ghee or oil in a pan and heat it. Now add bay leaves, cinnamon, black pepper, cloves, cardamom, and cumin seeds. Fry a little and add onions. When it turns golden, add chopped ginger, garlic, and green chilies to it. Cook a little and now put chopped tomatoes, salt, and cashews in it, put a lid on it and cook for a while.

Take out 65 percent of this paste in a separate bowl and keep it cool. Add peas to the remaining paste and cook it. After this, grind the paste taken out in the bowl well. Make this paste fine and then put it in the pan and cook it well.

Add turmeric powder, cumin powder, coriander powder, and Kashmiri red chili to the prepared paste and cook well. After this, add kasoori fenugreek to it and cook for about 2 minutes after pouring water on top. Pour fresh cream or cream over it and then let it come to a boil. Put garam masala on top of it. Now put pre-prepared roasted Makhanas in this gravy and then garnish with green coriander.
