How to make Puran Poli
-To make Maharashtrian style puran poli, first of all, take chana dal, wash it with clean water and soak it for 3 hours. Now take a pressure cooker and put water in it and keep a vessel. Put the soaked chana dal in the vessel, add 1/4 tsp turmeric, salt, one spoon oil and 3 cups of water and close the lid of the cooker. Now let 5 whistles come in the cooker. After that turn off the gas.
-Open the cooker after the pressure is released. When the dal cools down, drain the water from it. Now put the cooked chana dal in a pan and add jaggery to it and mix both. Mix both well till the jaggery melts. Cook this mixture until it starts leaving the pan. Add nutmeg powder and cardamom powder and mix it. After this turn off the gas and let the stuffing cool down.
-Now take a mixing bowl and add wheat flour, all purpose flour and mix them well. After this, mix flour, turmeric and salt according to taste in the flour. Now add water little by little and knead the dough. While kneading the dough, add a spoonful of oil to it so that the dough becomes smooth. Now keep the dough aside for 15 minutes. After the stipulated time, take the dough and knead it once again and prepare balls in equal proportions.
-Now take a ball and place it on the wheel and roll it into the shape of a puri, after that keep the prepared puran in the middle of it. After stuffing the puran, close the dough. After this, flatten it by placing it between both the palms and roll it. Now take a nonstick pan/tawa and heat it on medium flame. After the tawa is hot, put puran poli on it and roast it. Apply ghee in it and cook till it turns golden brown from both the sides. Similarly prepare all the puran polis. Serve Puran Poli with ghee.
