Ingredients for making Punjabi Chole
Chickpeas - 1 cup
Onion chopped - 1/2 cup
Ginger chopped - 1/2 tsp
Garlic chopped - 2 tsp
Green chili - 2
Cumin - 1/2 tsp
Red chili powder - 1 tsp
Dry mango - 3/4 tsp
Coriander powder - 1 tsp
Turmeric - 1/4 tsp
Cumin powder - 1/2 tsp
Tea bag - 1
Desi ghee - 2 tbsp
salt - as per taste

Punjabi Chole Recipe
To make Punjabi-style chole, first take chickpeas, clean them and soak them in water overnight. This will make the chickpeas puff up nicely. Take a cooker and put soaked chickpeas in it. Mix water and salt according to taste in proportion to the chickpeas. After this put the tea bag and cover the cooker and cook the chickpeas till 3-4 whistles. After this, turn off the gas and let the pressure of the cooker release on its own.

When the pressure of the cooker is released, take out the tea bag and separate it and filter the chickpeas with the help of a sieve and keep them in a vessel. Now take a deep bottom pan and add ghee to it and heat it on medium flame. After melting the ghee, add cumin seeds and fry it for 15 seconds. After this add finely chopped onions, ginger, green chilies, and garlic and fry them. Cook the onion till its color turns light pink.

After this add all the dry spices including red chili powder, amoocher, and cumin powder to the onion and mix. Then add salt as per taste. Now add 1 cup of water to the mixture and cook for 2 minutes while stirring. After this add boiled chickpeas to this gravy. Mix the gram well with the help of a ladle and then cover the pan and let it cook for 5-7 minutes. Keep stirring the chickpeas in between. After this, mash the chickpeas lightly with the help of a masher and then turn off the gas. Delicious Punjabi style chole is ready. Serve them hot with paratha, and naan.
