Pudina Rice Recipe: Pudina Rice is a perfect food dish to enhance the taste of dinner. Whenever a guest has to come to the house, everyone wants something special to be served in front of him. When it comes to dinner, an effort is made to make different and flavourful dishes. If you also want to prepare some special food for the guest coming home, then mint rice will help in enhancing the taste of your dinner. This recipe is very easy to make and this food dish is eaten by adults as well as children.
Often, simple rice or cumin rice is eaten in homes, but if you want to try something new, then mint rice is a better option for this too. Apart from being light for the stomach, it is also beneficial for health.

Ingredients for Mint Rice
Rice - 1 cup
Onion small - 2
Tomato - 1
Potato - 1
Carrot - 1
Capsicum chopped - 1/2 bowl
Beans chopped - 5
Peas - 2 tbsp
Cashew - 8-10
Cumin - 1 tsp
bay leaf - 1
Mint - 1 bowl
Green coriander chopped - 1 bowl
Garlic - 3-4 buds
Ginger - 1 inch piece
Green chili - 2
Coconut grated - 2 tbsp
Chakraphool – 1
cardamom - 2
Cloves - 4-5
Cinnamon - half inch piece
Black pepper - 1/2 tsp
Ghee - 2 tbsp
Salt - as per taste

How to make Mint Rice

  • To make Mint Rice, first put mint and green coriander leaves in a mixer jar. Add ginger, finely chopped onion, garlic and grated coconut and mix it. Now add star anise, cardamom, cinnamon, black pepper and cloves in this mixture and grind all the mixture by adding water according to the need and prepare a smooth paste. Now take out this paste in a bowl and keep it aside.
  • Now put 2 tbsp ghee in a pressure cooker and heat it on medium flame. When the ghee becomes hot and melts, add cumin and bay leaves and fry till the aroma comes. After this add cashew nuts and fry till golden brown. Now add finely chopped onion and fry till the onion becomes soft. After this add finely chopped tomatoes, capsicum, potatoes, carrots, peas and beans and cook them all for some time.
  • When all the vegetables become soft, then add the prepared paste to it and mix it well. Then add 2 cups of water and salt as per taste. Now take rice soaked in water for about half an hour, add them to this spice and mix it and cook till 2-3 whistles come with the lid of the cooker. Now turn off the gas and open the lid when the cooker gas is released. Your delicious Pudina Rice is ready. Serve it with chutney or raita.
