Ingredients for Mix Vegetable Idli
Semolina (rava) - 1 cup
Curd - three quarter cup
Sweet corn - 2 tbsp
Peas - 2 tbsp
Capsicum - 1/2
Carrot - 1
Beans – 4-5
Cashew - 7-8
Rai - 1 tsp
Cumin - 1/2 tsp
Chana dal - 1 tsp
Urad Dal - 1 tsp
Asafoetida - 1 pinch
Curry leaves - 8-10
Green chili - 2
Ginger chopped - 1 tsp
Green coriander - 3 tbsp
Fruit salt - 1/2 tsp
Oil - 2 tbsp
Salt - as per taste

How to make Mix Vegetable Idli

  • To make Mix Vegetable Idli, first cut finely pieces of carrot, green chili and capsicum. After this, put some oil in a nonstick pan and heat it on medium heat. When the oil becomes hot, add mustard seeds, cumin, chana dal, urad dal and fry it. After a few seconds, add curry leaves and a pinch of asafoetida and fry while stirring with a spoon. Add finely chopped ginger, green chilies and cashews to this spice. Fry cashews till they turn golden.
  • When the color of cashews turns golden brown, then add carrots, sweet corn, beans, peas and capsicum to the pan and fry. Let the vegetables fry for about 2 minutes. After this add salt and turmeric as per taste and mix it. After this add semolina (rava) to this mixture and let it roast on low flame. After roasting the rava for 5 minutes, turn off the gas and put all the mixture in a big vessel.
  • After this, add curd to this mixture and mix it well while stirring it with a spoon. After that, by adding half a cup of water and finely chopped coriander, mix the ingredients and prepare a smooth batter and keep it aside for 20 minutes. After the stipulated time, once again beat the batter well and add more water as required so that the consistency of the idli batter becomes stable.
  • Now take a pot for making idli and grease it with a little oil first in every meal of its plate. Now add fruit salt/baking soda to the batter and mix until the batter becomes frothy. After this, put the batter in the pot and cook the idli on medium flame for about 15 minutes. After that turn off the gas. full of flavor
