Ingredients for making Banarasi Dum Aloo
Potatoes (small sized) - 1/2 kg
Tomato - 4
Cream / cream - 2 tbsp
Red Chilli Steep - 4
Red chili powder - 1/2 tsp
Ginger chopped - 1 inch
Garam Masala - 1/2 tsp
Cashew - 10-12
Cumin - 1 tsp
Fennel - 1 tsp
Kasuri methi - 1 tbsp
Desi Ghee - 1 tbsp
Green cardamom - 4
Green coriander leaves chopped - 1 tbsp
Oil - for frying
Salt - as per taste

How to make Banarasi Dum Aloo

  • To make Banarasi Dum Aloo, first peel the potatoes and wash them. After this, with the help of a fork or toothpick, take each potato and pierce them all around. Now wipe the potatoes with a clean cloth and keep all the potatoes aside in a plate. Now put oil in a pan and keep it to heat on medium flame. After the oil is hot, add the pierced potatoes in it and fry till golden brown. After this take out all the fried potatoes in a plate.
  • Take another wok and heat 2 tsp oil in it. When the oil becomes hot, add finely chopped tomatoes, cumin, fennel, red chilies and chopped cashews and fry them well. It will take about 5 minutes to roast them. After the mixture is roasted well, turn off the gas and let the masala cool down. After this, grind the spices in the mixer and prepare the puree.
  • Now heat ghee in a pan. After the ghee melts, add green cardamom and kasoori fenugreek by mashing it with your hands and fry for a few seconds. Add tomato puree and salt to taste. Now let the gravy cook while stirring occasionally. After cooking for 1-2 minutes, add two cups of water to it and let the gravy boil. When the gravy comes to a boil, add fried potatoes and let it cook on low flame for about 15 minutes.
  • During this, keep stirring the vegetable in between. Now add fresh cream and garam masala to it and mix. When the vegetable comes to a boil, then turn off the flame. Your delicious Banarasi Dum Aloo is ready. Before serving, garnish it with chopped coriander leaves. Serve the vegetable with naan or paratha.
