Eggplant - 2 thick medium sized
Flour - 2 tbsp
Turmeric Powder - tsp
Chili Powder - tsp
Sugar - 1 tsp
Mustard oil - 4 tbsp

How to make Eggplant Bhaja
Cut the brinjal into half inch rounds. Leave it soaked in water for 10 minutes. Mix flour, chilli, turmeric powder, sugar and more salt in a vessel and add 2 tbsp of water to it. Add the pieces of brinjal to the thick mixture and mix it well, so that the mixture is applied all over the brinjal. Keep it covered for 15 minutes. Heat oil in a pan and keep the brinjals one by one. When one side of the brinjal is cooked, then cook the other side. Cook them on low flame till the brinjals become crisp. These brinjals taste very hot hot. Serve it with lentils and rice.

Keep these tips in mind
For Bhaja, always take brinjals of circular and large size. The less seeded brinjal bhaja turns out to be delicious. Do not put more than 3-4 pieces of brinjal together while making bhaja. By doing this, the brinjals will not cook well from all sides. While making bhaja, turning it again and again can break the bhaja, so avoid doing this.
